Vegetable Oats Upma

  • 1 cup rolled oats (roasted)
  • ½ carrot finely chopped
  • ½ onion finely chopped
  • 10 cashews/kaju whole
  • 5 beans finely chopped
  • ¼ capsicum finely chopped
  • 2 tbsp peas/matar
  • 1 tbsp oil
  • 1 tsp mustard
  • ½ tsp urad dal
  • ½ tsp jeera/cumin
  • A few curry leaves
  • 1-inch ginger finely chopped
  • 2 chilies slit
  • ½ tsp turmeric
  • ¾ tsp salt
  • 1 cup water
  • 2 tbsp coriander finely chopped
  • 2 tbsp coconut (grated)
  • 1 tbsp lemon juice

 

Instructions

  1. In a large kadai heat the oil and mustard, urad dal, jeera, curry leaves, and the cashews.
  2. Sauté these ingredients until the cashews turn golden brown.
  3. Then add the ginger, chilies, and onion and sauté well.
  4. Add the carrot, beans, capsicum, peas, turmeric, and salt.
  5. Add 2 tablespoons of water, then cover the kadai and let the food simmer for 5 minutes.
  6. Then add 1 cup water and bring it to a boil.
  7. Once the water is boiling add the oats and mix until the oats absorb all the water.
  8. Cover the kadai again and let it simmer for 5 minutes or until the oats are cooked.
  9. Now add the coriander, grated coconut, and lemon juice and serve.
  10. You can also keep it for a later meal.
